Grain Free Chocolate Cake

This cake is a grain-free chocolate delight, made using coconut flour (so is perfect for any of the gluten free, wheat free beauties out there). Using coconut flour in the place of wheat flour means this cake is naturally lower in carbohydrates, and higher in protein (especially with 6 eggs added in the mix).

Also, a great way to give your kids a protein boost, btw! Raw cacao is high in magnesium, and packed full of antioxidants – plus using extra virgin olive oil also gives it a healthy dose of fats, making this a well-balanced sweet treat!

Serve with a little yoghurt (coconut yoghurt if you want to keep it dairy free).

Grain  Free Chocolate Cake

Ingredients

  • ½ cup of cacao powder
  • ½ cup of coconut flour
  • 2 ½ teaspoons of baking powder
  • Pinch of sea salt
  • 6 organic eggs
  • ½ maple syrup (*or honey)
  • 2 teaspoons of vanilla bean paste
  • 125mls of extra virgin olive oil
  • 125mls of coconut milk

Method

  1. Preheat oven to 160c
  2. Combine the cacao, coconut flour, baking powder and sea salt in a mixing bowl.
  3. Add the eggs, maple syrup, vanilla, olive oil and coconut milk. Mix well with a whisk until smooth and combined.
  4. Spoon in a 20cm baking tin lined with baking paper.
  5. Bake for 50-60 mins or until cooked through.
  6. Remove from the oven and cool.

This cake is perfect with a dark chocolate ganache. To make ganache, heat 125mls of coconut milk until hot, but not boiling. Turn off the heat and add 125g of dark chocolate. Fold the chocolate through and spread on cooled cake – enjoy!
